Introducing Shawn Breen – Head Chef Pumpyard Bar
Born and raised in Brooklyn, NYC Shawn has had a varied culinary career spanning across the USA and Australia. Shawn has worked in top, world famous fine dining establishments in New York such as Per Se, Gallagher Steakhouse, Robert Steak House (New Jersey) and Russian Tea Room. He has worked alongside celebrity chefs such as Bobby Flay and Emeril Lagassi, and cooked for celebrities such as John Goodman and Meryl Streep to name a few.
Shawn’s Australian cooking career has seen positions with high calibre bars and restaurants and most recently as Head Chef of the Plough Inn, Southbank. Shawn has a passion for authentic Southern American BBQ and classic comfort foods. His food ethos is simple tasty food, done well (and made to perfectly pair with beer). Shawn leads a talented kitchen team consisting of Keira, Zac, Brandon, Mariah & Brett – who all share a love of good food and look forward to serving you a delicious meal in Pumpyard soon.

Born and raised in Darwin, Northern Territory, Shannon has a 20 year exceptional background in culinary expertise. Shannon’s working background includes 5 star hotels and resorts and his passion for food has been demonstrated through leading his teams to successful back to back AHA Gold Plate Awards in 2017 and 2018.
Shannon’s food ethos is based around creating ‘simple’ yet sophisticated food that speaks for itself. Combining the best local produce with Australian native bush ingredients, Shannon and his talented brigade – Tabytha, Sean, Blair - create a truly magical, creative and unique culinary experience for Dovetails diners.

OUR HISTORIC PRECINCT

As part of this redevelopment 4 Hearts Brewery was created.
“The best beer is the beer consumed in the shadow of the brewery where it was made”
This conversation sparked the idea of a micro-brewery; enter Wade Curtis, an Ipswich local amateur brewer with a fledgling brewing company called 4 Hearts Brewing. The deal was sealed and James became the major shareholder of 4 Hearts brewing and Pumpyard was born.
After 2 successful years Wade left 4 Hearts to pursue his other passion of Marketing in the private sector; Ken Friend a classically German trained brewer took over as the new Head Brewer and Dovetail & Lord Lamington Suite were added to the brand.
